Speedy Hokkien Noodles Loaded with Veggies

Some nights, you just need dinner on the table fast – no fuss, no complicated prep, just a hot, satisfying meal that everyone will love. These Hokkien noodles are exactly that. With a flavour-packed sauce, tender strips of chicken, and plenty of colourful vegetables, this stir-fry comes together in a lightning-fast 6 minutes of cooking time.

The beauty of this recipe is its flexibility – you can throw in whatever vegetables you have on hand, and it’ll still be delicious. But on those crazy busy nights when even chopping feels like a chore, this version uses quick-prep veggies that cook in minutes. Serve it straight from the pan, and watch it disappear!

Ingredients

For the Sauce:

  • 60 ml (¼ cup) oyster sauce
  • 30 ml (2 tbsp) light soy sauce
  • 15 ml (1 tbsp) dark soy sauce
  • 30 ml (2 tbsp) mirin
  • 15 ml (1 tbsp) toasted sesame oil
  • ¼ tsp white pepper (or black pepper)

For the Chicken & Noodles:

  • 500 g (about 1 lb) fresh Hokkien noodles
  • 400 g (about ¾ lb) boneless, skinless chicken thighs, thinly sliced
  • 2 tbsp neutral oil (vegetable, canola, or peanut)
  • 3 large garlic cloves, minced
  • 4 scallions, cut into 5 cm (2-inch) batons (white and green parts separated)
  • 150 g (about 2 cups) green cabbage, thinly sliced
  • 1 medium red capsicum (bell pepper), thinly sliced

Method

Stage 1: Prep Everything First

1. Mix the sauce – In a small bowl, combine oyster sauce, light soy, dark soy, mirin, sesame oil, and white pepper. Stir until smooth.

2. Marinate the chicken – Spoon 1½ tablespoons of the sauce over the sliced chicken. Toss well and set aside for 10 minutes. This brief soak is enough to infuse the meat with flavour.

3. Prep the noodles – Follow the packet instructions – usually a quick soak in boiling water. Drain, then rinse briefly under cold water. This stops them from turning gummy when stir-fried. Set aside.

Stage 2: Cook It All Together

4. Sear the chicken – Heat a large non-stick pan or wok over high heat. Add the oil and swirl to coat. When shimmering hot, add the chicken in a single layer. Let it cook undisturbed for 1 minute, then toss. Add the garlic and the white parts of the scallions. Cook for another minute until fragrant and the chicken is sealed.

5. Toss in the vegetables – Add the sliced cabbage and capsicum. Stir-fry for about 2 minutes. The cabbage should wilt, and the chicken should be nearly cooked through.

6. Bring it all together – Add the green scallion tops, the drained noodles, and the remaining sauce. Using two spatulas or wooden spoons, toss everything vigorously for 1½ to 2 minutes. The noodles should turn a glossy, appetising brown as the sauce clings to every strand.

7. Serve immediately – Transfer to bowls and enjoy while hot.

  • Noodle swaps: Any noodles work – thin, flat, egg, rice, or even pasta. For dried noodles, use less as they expand.
