Whether you serve it in a bowl, a cone, or alongside a pile of fresh summer berries, this sherbet is pure refreshment. It’s the kind of dessert that feels simple yet special – a little scoop of sunshine on a warm day.
Ingredients
- 475 ml (2 cups) whole milk, very cold
- 8 g (1 tbsp) cornflour (cornstarch) – optional, for smoother texture
- 60 g (½ cup) lemon juice powder
- 170 g (¾ cup) granulated sugar
- 120 ml (½ cup) freshly squeezed lemon juice, chilled
- A tiny pinch of fine salt
- 1–2 tsp finely grated lemon zest (optional, for extra punch)
Method
1. Combine the dry ingredients
In a blender, toss in the sugar and lemon juice powder. Give it 8 to 10 quick pulses until they’re thoroughly blended. This step is crucial – lemon juice powder doesn’t dissolve easily in liquids, so mixing it with sugar first ensures a smooth finish.
2. Add the wet ingredients
Pour in the cold lemon juice, milk, and cornflour (if using). Add the lemon zest and a tiny pinch of salt if you’re using them. Blend for about 30 seconds until everything is silky and well combined. No blender? Whisk vigorously in a large bowl until smooth.
3. Chill completely
Transfer the mixture to a container and pop it in the fridge for at least 4 hours – overnight is even better. Cold mixture = better churning.
4. Churn it up
Pour the chilled mixture into your ice cream machine and churn according to the manufacturer’s instructions – usually 20 to 30 minutes, until it reaches a soft, creamy texture.
5. Freeze until firm
Transfer the churned sherbet to a freezer-safe container. Lay a piece of parchment paper directly on the surface to prevent ice crystals, then freeze for 2–3 hours until firm enough to scoop.
6. Serve and savour
Let it sit at room temperature for about 5 minutes before scooping. Garnish with fresh berries, a mint sprig, or a dusting of lemon zest for a gorgeous finish.
Smart Baker’s Tips
- No lemon juice powder? Swap it with 75 g (⅓ cup) instant lemonade drink mix and reduce the sugar to 75 g (⅓ cup). Adjust sweetness to your liking.
- Extra lemon love: Add 1–2 teaspoons of lemon zest or a few drops of lemon oil for an even more intense citrus punch. A tiny drop of yellow food colouring gives it a gorgeous sunny hue if you’re feeling fancy.
- Milk matters: Whole milk gives you the creamiest texture, but you can use low-fat milk – the sherbet will be slightly less rich but still delicious.
- No ice cream machine? Pour the mixture into a shallow dish and freeze. Every 30 minutes, whisk vigorously with a fork to break up ice crystals. Repeat 4–5 times until creamy and scoopable.
- Storage: Keep in an airtight container in the freezer for up to 1 month. Let it soften for 5–10 minutes before serving.
Enjoy your bright and zesty lemon sherbet! 🍋✨
