- Option 1: 540 ml (2¼ cups) whole milk + 180 ml (¾ cup) heavy cream
- Option 2: 720 ml (3 cups) half-and-half
- Option 3: 480 ml (2 cups) low-fat milk + 240 ml (1 cup) heavy cream
- Option 4: 360 ml (1½ cups) whole milk + 360 ml (1½ cups) light cream
Method
1. Freeze your ice cream bowl
This is non-negotiable. Pop your ice cream maker bowl into the freezer for at least 24 hours before you start. A warm bowl = liquid ice cream. Trust me on this.
2. Make a matcha paste
Matcha is powdery and clumps up the second it hits liquid. To avoid lumps, sift the matcha powder into a small bowl. Add about 2–3 tablespoons of warm milk (from your measured dairy) and whisk vigorously until it forms a smooth, lump-free paste. No green chunks allowed!
3. Combine everything
In a large mixing bowl, whisk together your chosen dairy, sugar, and salt until the sugar dissolves completely. Add your matcha paste and whisk thoroughly until the mixture turns a beautiful, uniform pale green.
4. Chill, chill, chill
Cover the bowl and refrigerate for at least 4 hours – overnight is even better. This step is crucial for proper churning. (And yes, this is the hardest part of ice cream making – the waiting!)
5. Churn it up
Pour the chilled matcha mixture into your pre-frozen ice cream maker and churn according to the manufacturer’s instructions – usually 20 to 30 minutes. The texture should be soft-serve consistency when done.
6. Freeze until firm
Transfer the churned ice cream to a freezer-safe container, press a piece of parchment paper directly onto the surface (to prevent ice crystals), and freeze for at least 2–3 hours until firm enough to scoop.
7. Serve and enjoy
