The No-Flip, No-Fuss Corn Fritter

Corn fritters are delicious – but standing over a hot stove flipping tiny pancakes while kernels pop like popcorn grenades? No thanks. There had to be a smarter way.

So I created one giant skillet-sized fritter instead. No flipping. Less oil. Less mess. Just a gorgeous golden pancake with crispy edges and a soft, cheesy center that practically melts in your mouth. A quick broil at the end gives the top that perfect browned finish without any fuss.

This fritter works any time of day – pile it high with fresh greens for a light summer dinner, or top it with fried eggs and extra scallions for a breakfast that feels like a weekend treat. One pan, endless possibilities.

Ingredients

  • 2 extra-large eggs, lightly beaten
  • 2 tsp smoky spice blend (optional but adds a lovely kick)
  • ½ tsp freshly cracked black pepper
  • ½ tsp fine sea salt
  • Kernels from 2 large ears of sweet corn (about 1⅓ to 1½ cups / 200–230 g)
  • 2 spring onions, thinly sliced
  • 90 g (¾ cup) whole-milk mozzarella, shredded
  • 30 g (¼ cup) Parmesan, finely grated
  • 35 g (¼ cup + 1 tbsp) all-purpose flour
  • 30 g (¼ cup) cornflour (cornstarch)
  • 20 ml (1½ tbsp) extra-virgin olive oil

Method

1. Set up your oven
Place an oven rack in the top third of your oven and switch the broiler to high.

2. Beat the wet ingredients
Crack the eggs into a spacious mixing bowl. Add the spice blend (if using), pepper, and salt. Whisk until everything is smooth and frothy.

3. Strip those cobs
Lay one ear of corn flat on your cutting board. Run a sharp knife down each side to slice off the kernels. Rotate and repeat until bare. Then scrape the blunt side of a butter knife down the empty cob to release all those sweet, milky juices into your bowl – that’s pure flavour. Do the same with the second cob. You’ll end up with roughly 1⅓ to 1½ cups of kernels.

4. Mix the batter
Toss the scallions, both cheeses, flour, and cornflour into the bowl with the corn. Fold everything together with a flexible spatula until you have a uniform batter with no dry flour streaks.

5. Heat your skillet
Set a 10-inch cast-iron skillet over medium-high heat and let it warm up until it’s properly hot – about 350°F (175°C).

6. Add the oil
Pour in the olive oil and swirl the pan to coat the bottom evenly. The oil should shimmer and ripple – that’s your sign it’s ready.

7. Spread the batter
Carefully tip the corn mixture into the hot skillet and use your spatula to press it into an even layer that reaches all the way to the edges.

8. Cook the underside
Lower the heat to medium and let the fritter cook without moving it for 5 to 7 minutes. Give the pan a turn once or twice so it browns evenly. Lift a corner with your spatula to check – you want a gorgeous deep golden crust underneath.

9. Brown the top
Transfer the skillet to the oven and broil for 1 to 2 minutes. Keep a close eye on it – you’re looking for golden patches and little blistered spots on top.

10. Cool and serve
Let the fritter rest in the pan for about 5 minutes – this helps it hold together. Then carefully slide it out onto a cutting board or serving plate. Slice and serve warm.


A Few Smart Tips

Fresh summer corn is your best friend here – it gives you that sweet pop and perfect texture. If you’re stuck with canned corn (winter happens), pat it bone-dry with paper towels before using, or you’ll end up with a soggy fritter. Frozen corn? Just don’t. It turns sad and watery. Want to make it gluten-free? The measure-for-measure flour works like a charm, just double-check your spices and cheeses for hidden gluten. And here’s a pro move: serve this bad boy with a dollop of sour cream, a drizzle of hot sauce, or a pile of peppery arugula – it’s incredible every which way.
